Bollinger full of grapes, the rolling hills in the background. Founded in 1829, Bollinger (aka "Bolly") is a champagne house that produces sparkling wine in Ay in the Champagne region of France, fermented in oak barrels; the company has been family run since 1889 and now one of the last remaining independent Champagne houses; in 1884 Bollinger received a Royal Warrant from Queen Victoria.
